The Bastion Kitchen & Bar is the latest chapter from the team behind Trim Castle Hotel, which has been welcoming guests to Trim for 20 years. The name began, naturally enough, with our rather famous neighbour, Trim Castle.
But bastion also means something that stands firm for what it values. We rather liked that idea. Because what we stand for is simple: great food, warm hospitality and good company. You might even say we’re bastions of the things that matter.
As it happens, we’re rather spoiled when it comes to neighbours. Here in the Boyne Valley, farmers, growers, butchers and makers produce exceptional Irish food, with local and seasonal produce appearing on our menus alongside great Irish ingredients from further afield.
So while the castle gave us the name, and the great view, of course, the Boyne Valley and 20 years of hospitality made it ours.
